I love meringue cookies, but I really don't have the time or patience to spend in complicated recipes, so after trying sooooo many crazy ideas... I finally got lucky with this one.... justput in the mixer two simple ingredients, 3 room temperature egg whites and 1 1/2 cup of powdered sugar for 10 minutes .... Then bake it in the oven for 1 1/2 hour at 195 F and Boo-yah!, meringue is ready!
It feels almost like cheating.... after watching thousands of videos about how to make meringue cookies... almost every one of them seems to be very complicated, like pouring the sugar painfully slowly in to the mixer or the one that recommends to heat and whisk the eggs with sugar until it dissolves.......too much work! sorry! .....so this recipe is like a short cut:)
I tried them all, and the result is almost the same, ... in my humble opinion.
Separate the egg whites in to the bowl of your stand mixer.
Add the powdered sugar to the bowl, then begin mixing on low for a few seconds and then increase the speed to high for 10 minutes.
If you are coloring the meringues trees, this is the moment to do it. Add a little amount of coloring in with a toothpick.
Add small dollops of meringue to the corners of your baking sheet and press the parchment paper down.
Place mixture in a pastry bag with desired tip and pipe out your trees onto the prepared baking sheet.
Insert Popsicles sticks inside the trees. Don’t let it sit for too long as it will lose consistency.
Bake for 1 hour and 30 minutes or until the meringue trees come off the parchment paper cleanly and without sticking. Then turn off the oven and leave the meringue trees in until the oven is completely cool. Conserve in an air tight container for up to three weeks.
